Enchiladas

I got this recipe from my mom and it is an all time favorite for my husband and his brothers. I love making them and the recipe is nice because it makes at least 10 enchiladas, sometimes 12! It depends on how much filling you use.

Ready in 30-40 mins

Ingredients:

Enchilada Seasoning
Refried Beans
Ground Beef (can be made w/ ground turkey as well)
Tomatoe Paste
Shredded Cheddar Cheese
Tortillas

Directions:

Place the ground beef in a skillet and start browning it. Get a pot and put in the refried beans and keep on medium heat. In another pot add the tomatoe paste , 1/2 cup of water and enchilada seasoning cook on low heat (careful it splatters!). Add half of the tomatoe patse in w/ the refried beans. Remove the other half of tomatoe paste from the heat and save for later (it will go on top of the enchiladas. When ground beef is finished cooking, add it to the refried beans as well. Mix together well. Get out a 13x9 baking dish. Take your tortillas and start making them like burritos. Add in the enchilada filling. I use about 1/2 cup for each tortilla. I usually can fit 6 enchilladas in a 13x9 baking dish. When you have 6 enchiladas made, pour some of the left over tomatoe paste on top. Top that with shredded cheddar cheese.

Pre Heat Oven to 350

Bake for 15 mins. Then serve. Goes great w/ sour cream on top!
