Chicken Tacos/Enchiladas

Cooking Time: 30-40 mins (depending on when you cook the chicken).

Ingredients:

Chicken
Salsa
Cream of chicken
sour cream
cheese (shredded)
ck seasoning
fajita seasoning
butter
tortillas


First step: Baking the chicken

Preheat oven 375

I use a glass baking dish, rinse the chicken, place chicken in baking dish, spread a little bit of butter over the chicken, not too much about 1/2 tsp per ck. Put chicken seasoning over the chicken, we use mcormick. Bake in the oven for 30-40 mins, we like it juicy.

Step 2: when the chicken is finished baking, I pull pieces of it apart , get the tortillas and place them in another baking dish, upside like in the picture, when I am baking them, I leave them open like taco's. Add cream of chicken to the chicken in the tortillas, sour cream, sprinkle the cheese and add about 3 tbsp of salsa. All three steps have to be done to your liking, if you like really creamy enchiladas, then add more, for not so creamy, add less. Bake in the oven for about 10-15 mins. Once they are finished, finish rolling them together like an enchilada. You can eat them as tacos, burritos or enchiladas, they are enchiladas for us because we put salsa on top of them after they are finished in the oven. The salsa we use is home made.
