General Tso's Chicken


You will notice in a lot of my posts, my recipes are usually something my husband loves. Don't we all love to cook for our hubbys. Me personally, I love food, but I could probably eat salads most days of the week and be fine! I usually ask my husband to pick recipes out and I will cook those meals that week. So here is the newest recipe. I have never made this before and it actually turned out really good. This was one of my husbands favorites chinese recipes. I didn't know how to make it, so like always, I run to the computer to find a good recipe with good ratings. You can laugh at me trying to be all chef like with my pictures, but this was actually the first time I have ever cooked green onion. I served it w/ brown rice.
Ready in about 30 mins.
Serves about 4 people.
Ingredients:
1 pound chicken thighs, bonless
1 tbsp light soy sauce
1 egg, beaten
freshly ground blk pepper to taste
corn starch, as needed
Sauce:
2 tbsp soy sauce
1 tablespoon rice vinegar
1 tbsp sugar
3 tbsp chicken broth or water
1 tbsp minced ginger
2 tsp minced garlic
2 tsp cornstarch
3 green onions
5-10 dried red chilli peppers
3-4 cups oil for deep frying
Directions:
Sauce: Put everything into a quart jar with a lid and shake it up, then put in the fridge. Just shake it up again when you are ready to use it.
Meat: Mix chicken, soy sauce, and hot peppers. Stir in egg. Add cornstarch, and mix until chicken pieces are coated. Deep fry 7 or 8 chicken pieces at a time on medium heat until chicken pieces are crispy. Drain on paper towels. Repeat until all chicken chunks are fried. Place a small amount of oil (1 Tbsp.) in frying pan, and heat to 400 degrees. Add onions, peppers and stir fry about 30 seconds. Stir sauce mixture, and then add to frying pan. Cook until thick. If it gets too thick, add water to right consistency. Add chicken to sauce in frying pan, and cook until all is hot and bubbly. Serve with fried or steamed rice.
