
I was looking online at a bunch of different recipe sites and found this great recipe for Avocado dip. I am not a huge fan of Avocado's, but they made the recipe sound so good. You can view the original recipe from Epicurious. I went out and got the ingredients and was really impressed. So if you do like Avocado's, im sure you will love this recipe. If you aren't sold on them yet, but still want to give them a try, then try this recipe.
Ingredients:
2 ears of sweet corn
1 tomato, diced
1/4 red onion, diced
2 ripe avocados, diced
1 red jalapeno, seeded and finely diced
Juice of 1-2 lime
2-3 tbsp fresh cilantro, chopped
Sea salt and freshly cracked pepper, to taste
Directions:
You will first need to shuck the corn and slice the (uncooked) kernels off the cob. Dice tomato, red onions, avocado, and jalapeno. Combine all the ingredients in a bowl along with lime juice and cilantro. Season well with sea salt and freshly cracked pepper to taste. Then Enjoy!
